Ingredients
- 1 pound dairy-free chocolate
- 2 Tbsp coconut oil (or palm shortening)
- 1 pound fresh strawberries
Instructions
- Wash and dry strawberries. Pull strawberry leaves up, away from the berry’s surface. If you will be using a toothpick or wooden skewer to dip the strawberries, insert them vertically through the top of the strawberries. Otherwise, you can hold the strawberry leaves with your fingers.
- Line a baking sheet with parchment paper.
- In a double boiler over low heat, melt the chocolate and coconut oil (or palm shortening). Stir until mixture is completely smooth.
- Holding the toothpick, wooden skewer or the strawberry leaves, dip a strawberry into the melted chocolate, rotating in a clockwise motion until most of the surface is covered. Hold the strawberry above the pot to allow excess chocolate to drip off, and then place the strawberry on its side onto the parchment-lined pan. Repeat with the other strawberries.
- Refrigerate strawberries for 20 minutes or until chocolate is hardened. Store strawberries covered in the refrigerator to maintain freshness.
