Garlic-infused olive oil is a culinary treasure for sauces, dressings, and drizzling over appetizers and entrées, and it’s a great ingredient for heart health. Although it can be purchased, making garlic-infused olive oil at home is super easy and tastes delicious.

Aside from the superior taste, infusing olive oil with garlic imparts health properties. The infusion is excellent for heart health; contains vitamins, minerals, and antioxidants; has antibacterial properties; and is rich in monounsaturated fatty acids. Perhaps one of the most unique functions of olive-infused olive oil is to impart garlic flavor to dishes without FODMAPs (fermentable oligo-, di-, monosaccharides and polyols). Garlic is very high in FODMAPs, but it is not soluble in oil. Know the Risks
Unlike store-bought garlic-infused olive oils, the homemade infusion process does not got through an acidification process for preservation. Therefore, you must be careful and take steps to reduce the risk of botulism. The microorganism Clostridium botulinum, which causes botulism, is naturally present in soil and grows in an environment without oxygen (anaerobic). Since garlic comes from soil, it can carry the bacteria and grow in oxygen-free olive oil.
Know the Symptoms of Botulism:
- Double vision
- Difficulty breathing
- Difficulty swallowing and speaking
- Weakness with paralysis on left and right sides of body
Proper precautions and kitchen safety steps will minimize this risk so you, like several others, can enjoy the culinary and health benefits of homemade garlic-infused olive oil.
- Make sure your preparation method involves heating the infusion to help kill any potential bacteria
- Make it fresh and consume it right away
- Store leftovers in the refrigerator
- Use any leftovers within four days
- Thoroughly wash and dry garlic bulbs
