Phew, I did it! I’m going bananas because I just finished trying all three flavors of the Simple Mills Muffin Mixes. You guessed it; this last variety was the Simple Mills Banana Muffin Mix. I took a walk on the wild side in search of some bananas and decided to make a banana bread loaf instead of banana muffins. With a few speckled add-ins, I baked up a traditional banana bread loaf that is super duper healthy and took little effort. Whether you call me a monkey and join me in some Tree Pose while your banana bread loaf is baking or not, your taste buds will be swinging and you’ll be singing Bobby Day’s Rockin’ Robbin in no time.
This banana bread achieves the perfect balance of moist, rich, and satisfying bread. The delicate concert of sweet bananas and nutty walnuts leaves you with the finest nostalgic memories. For me, this means deciding to make homemade banana bread with my dear brother on a snow day. We carefully searched our mom’s recipe book for the “Banana Bread” title in the index, flipped to the ripe page, and gathered our ingredients. What were we to do when our efforts were hampered by not having bananas, never mind ripe bananas speckled with the repulsive (at least to children’s eyes) black spots? We problem solved and went knocking on a neighbor’s door. As fate would have it, Mary, our neighbor, had those perfect bananas and we hustled back to our kitchen to get baking. Proud of our efforts, we could hardly wait to show mom the work of our love and hands. Mom was in disbelief when she later found out that we went and asked Mary for bananas, but we all sure enjoyed homemade banana bread and the memory it created is priceless. This was banana bread that only love could buy.

Notes
Egg substitution:
Mix 1 Tbsp flaxseed mixed with 3 Tbsp hot water; let thicken for a few minutes. Once thickened and right before using, add 1/4 tsp baking powder.
Please Note:
I have not tried making the egg-free version in bread loaf form, so you may need to bake it a little longer or make mini loaves to assist with the baking and rising.

Ingredients
- 1 package Simple Mills Banana Muffin Mix
- 2 egg whites (*see egg substitution in the notes below)
- 4 tsp coconut oil, divided
- 2/3 cup water (filtered)
- 1/2 cup walnuts (chopped)
- 1/4 cup walnuts (halved)
Instructions
- Preheat oven to 375°F.
- Pour contents of Simple Mills Banana Muffin Mix into a large mixing bowl.
- In a small bowl, add egg whites and 1 tsp of coconut oil. Lightly beat with a hand mixer to incorporate and add air to the mixture. (*see egg substitution in the notes below)
- Add egg mixture, water, and remaining coconut oil to the muffin mix.
- Mix until the batter is smooth and well incorporated.
- Stir in ½ cup chopped walnuts until evenly dispersed throughout the batter.
- Pour into a loaf pan greased with coconut oil (or use a parchment baking loaf pan).
- Sprinkle the top of the batter with ¼ cup of the halved walnuts (alternatively, use whole walnuts).
- Place the filled loaf pan in the preheated oven and bake at 375° F for 25-30 minutes; then reduce heat to 350 degrees Fahrenheit and bake for 5-10 additional minutes.
- Test for doneness by inserting and removing a fork or toothpick until it comes out clean.
- Remove from oven and let cool completely before slicing.
